The challenge during this first full week of Veganuary is to eat one pound of Broccoli every day. Trader Joe’s sells 1 lb bags of frozen broccoli “florets” for $1.49 which pack a total of 125 kcal and 45% of your recommended daily fiber each. So it seems reasonable.
According to one of Market Basket’s recent nutrition and recipe pamphlets Broccoli helps prevent arthritis. I also like how easy it is to make and eat when boiled with pasta, dried onion, an garlic. I wonder if 1 lb is enough.
